Mexican cuisine, a symphony of flavors and colors, has long captivated food lovers around the world. At Amor Loco Interior, New York City’s heart of Mexican gastronomy, we invite you on a tantalizing journey through the soul of Mexico's culinary heritage.

Mexican Food

Pre-Columbian Origins: The Starting Point

The story of Mexican cuisine begins with the Aztecs and Mayas, civilizations renowned for their culinary traditions. Imagine ancient kitchens filled with the aroma of maize, the cornerstone of pre-Hispanic cooking. The discovery of nixtamalization (processing maize with lime) wasn't just a culinary breakthrough; it shaped an entire culture. This ancient method led to staples like the beloved tortilla.

The Onset of Spanish Influence

Mexico's culinary landscape was significantly shaped by colonization, particularly by the Spanish. This period marked the introduction of various ingredients and recipes that profoundly influenced indigenous culinary practices. The Spanish brought with them a plethora of new elements – think rice, olive oil, garlic, coriander, and cinnamon, adding a whole new dimension to the native palate. This era also saw the introduction of domesticated animals like pigs, sheep, cows, chickens, and goats, revolutionizing the protein sources in the Mexican diet. Notably, the advent of dairy, especially cheese, became a staple in many Mexican dishes, adding richness and depth.

The Evolution into Modern Delights

As Mexican cuisine evolved, it absorbed global influences while retaining its core essence. Today, recognized as a UNESCO Intangible Cultural Heritage, it continues to impact global gastronomy. Interestingly, Mexican food has also been touched by French cuisine, particularly during the 19th century French intervention in Mexico. This influence, initially a preference among the upper class, has left an indelible mark, adding an element of refinement and variety.
